Recipe for smoking Prime Rib

Select a nice 6-8 lb prime rib with the bone in if you'd like.  Rub your prime rib with a rub. Pre-heat the smoker to 225 degrees and place your prime rib in your smoker. Use Upchurch Pecan Cooking and Smoking wood for best results. After 3 hours, place the prime rib in a aluminum foil pan and cover with more aluminum foil. When the internal meat temp reaches 145 degrees take out of smoker and let stand. Note: Medium rare is 155 to 160 degrees.  While standing, the temperature of the meat can rise up to 10 degrees.  Slice prime rib and serve with the juice from the pan.

David,

For smoked prime rib, I like to keep my smoker around 200 degrees. I does tend to make it longer smoke but since prime rib is expensive from the meat butcher, I definitely dont want to mess it up. I love prime rib but you want to check out different smoking wood times so you don’t ruin the prime rib. Thanks, David and great question
