When customers come to me asking about the best smoking wood, it's the best smoking wood recipe that is really most important. Often people read on the internet that apple wood is the best but that is not always true. Apple wood is a little too tangy for my tastes and is definitely an overrated smoking wood. 

Customers of mine that are competition BBQ smokers usually use at least 50% Pecan wood and I completely agree with that choice. If I sold only one type of smoking wood, it would be Pecan. It's a fabulous wood that goes well with all meats, vegetables, seafood and game birds.

Now the other 50% of the wood recipe is totally up to you and what you are cooking. Some choose the other 50% to be hickory, apricot, walnut or another wood. Smoking is a opinionated subject so what you may think is perfection coming out of your smoker may not be that great to the next guy.

A customer recently called me back to tell me what he found was his best eating experience has had with grilling fish. He used Pecan wood and Lemon wood chips. He wrapped the lemon wood chips in some aluminum foil and pokes some holes in the foil to allow the smoke to escape. He did happen to soak the lemon chips in water first to allow them to really smoke more into his smoking chamber in his grill. He mentioned his wife did not particularly like the fish she had had in the past. But, the lemon wood chips absolutely made his grilled fish come alive!  He called me excited!  This is what we are talking about when it comes to finding the correct smoking wood recipe for your cooking application.

Pecan wood and Apricot wood mix - This has been a good mix around our wood shop. Apricot wood has quite a hard core to the smoking wood and it allows it to burn for a long amount of time in your firebox. Apricot also has a better sweetness to it than Peach wood. When you been to try out different smoking woods, you realize quickly that there are better smoking woods out there than the typical Peach wood and Apple wood. Apple wood is just too tangy for me and my customers and this is the one big complaint about apple wood. The pecan wood and apricot wood mix far surpasses the other things people read on the internet on what is the best smoking wood. Please refrain from all the advise on the internet and start to begin your own search of what you like best. What you find as the best smoking wood recipe for you will probably surprise you because it may not be able to found on the internet. This is a fun search of experimentation because it always ends with eating some great meats!

There are quite a few well known smoking wood recipes. One recipe we have been using lately is Hickory smoking wood mixed with pecan smoking wood. We use a 50/50 mix and it does a great job with meats and more. The pecan smoking wood helps tenderize the meat and the hickory smoking wood is what gives the meat some authentic flavor. Once you find your favorite smoking wood recipes, it will make cooking even more enjoyable. If you are going to smoke pork ribs, start with Pecan and Hickory mixed together. For grilling and smoking fish start with Alder and Pecan. For grilling out burgers, I really like Mesquite and Hickory. Let me know if you need any more help!
