We have really been enjoying this great smoking wood recipe of Pecan and Walnut. We experiment with many different types of recipes but this is one to mention. We have used it grilling steaks, deer steak and long smokes of pork roast and BBQ pork ribs. What a excellent wood recipe!
Pecan smoking wood is known as one of the better smoking woods and helps tenderize meat in a light way. Pecan wood does not overpower your foods like some of the other best wood for smoking may do. We are not here to change the wood recipe if you have already found your great combination for your cooking. But we are here to help those that haven't found their best wood for smoking recipe.

Mixing pecan wood with walnut wood is a unique experience. Walnut has some similarities with hickory wood in the aromatic smoking features it has. But the nice feature of walnut wood is it doesn't dry out meat like hickory wood does. I am a fan of hickory wood which is the "King of the Smoking Woods" but it needs to be used correctly. Hickory trees also doesn't grow all over the United States so it is special that it grows in a plentiful way in the state of Oklahoma.

For the best direction on how to use Walnut wood with Pecan wood:  Begin you fire with some fruit wood kindling and do not use any charcoal fluid. This is important! Don't use gasoline or lighter fluid because it will soak into your wood and it WILL seep into your smoking wood. Starting your fire with paper and kindling is a much safer option. Begin to add Pecan wood because you will use the pecan wood as your base smoker box firewood. For the remainder of your cooking and smoking session, add 50% Walnut wood and 50% Pecan wood in equal wood amounts.  Since this type of firewood is the best wood for "smoking" it is best if the wood is not on fire during the entire cooking time. If the wood is on fire, it will heat up your BBQ smoker too much and you will get very little smoke into your smoke chamber. You want the Pecan wood and Walnut wood to "smoke" and the hot smoke cooks your meats, seafood and vegetables with the smoke.

Hi tony,

If you’d like to smoke the pork (boston butt or other) and chicken at the same time you can use pecan smoking wood and if you’d like an extra flavor that a bit of hickory. Those are the two smoking woods I use quite a bit. Some people prefer fruit smoking wood but that is just personal preference. If you have any more questions feel free to ask. Thanks #growokc
