We do a lot of smoking wood experimentation and other BBQ smoker techniques. Just getting the correct smoking wood technique down that fits your likes can take a very long time. Part of the pleasure of smoking your own meats, seafood, chicken, pork and fruit is all the different kind of ways you can make your cooking the best. As you learn more and more your food from the backyard BBQ smoker can get better and better. It is not always wise to trust everything you read on the internet cause it depends on the motivation behind it. For example on the internet, it says that apple wood is the best smoking wood. That is far from the truth. I have found wood recipe combinations that have far surpassed Washington State Apple wood. Actually they have so much apple wood in the orchards that they end up burning most of it because there aren't enough people paying for a semi to bring it out of their state.
One of the most valuable resources for your BBQ smoker is to use your water pan. This is a pan full of water or fruit juice that helps your meats stay moist and not dry out. If you don't use a water pan you may be forced to put your meat on aluminum foil to let it soak in its juices to stay moist. When your firebox heats up, put your water pan on top of the grill grate. As this water and fruit juices heat up it evaporates and send this vapor into your smoking chamber. This also allows you to put your smoking meat directly on your grates. The meat will stay moist!
Another smoking wood technique is to combine a couple different smoking woods so they compliment each other and give you are great smoke in your BBQ smoker. Some BBQ wood combinations that work really well is: Pecan/Hickory, Walnut/Pecan, Persimmon/Hickory, Persimmon/Pecan, Oak/Pecan. All of these smoking wood combination take on a different character in your BBQ smoker, but if you'd like to choose one of these wood recipes, you will not go wrong.
