This can really change your smoking experience for the better. Using some water or even apple juice in your water pan, you set it on the fire. When it heats up the hot steam goes into your smoking food chamber. This means you can put your meat right on the grate of the smoker and you don't have to put aluminum foil underneath it. I wouldn’t use mesquite wood for fish. I also wouldn’t use mesquite smoking wood in large doses for anything. Mesquite wood is great in small doses, but if you use it too much you can ruin you food. I’ve had to throw away meats and such using 100% mesquite.
