Firstly, it is important to pick the type of firewood that will work with the type of meat, pork, chicken or seafood that you are cooking. For example, the type of smoking wood for fish would not necessarily be the best smoking wood for wild game.

 

Smoking and Grilling Fish - When you are going to cook some great fish there are a variety of smoking woods to use and a couple to avoid. Pecan wood is one of the best choices because it is a lighter nut wood and is not going to overpower your fish meat. You can mix a light fruit wood along with it to compliment your smoke. Smoking wood pellets are often a better option because they also are not going to overpower your choice fish. Some pellets that come to mind are our Apple pellets, Pecan pellets and wine soaked oak pellets. When cooking fish you do want to stay away from hickory wood and mesquite wood. These two options will way overpower your fish and you will not be delighted with the outcome.

 

Wild game - One of our favorite meats to cook and smoke at our wood shop is Venison. We have used Apricot wood with great results and also Pecan wood. If you'd like some hickory flavoring then a little bit of hickory wood goes well you just need to make sure you don't use too much hickory or mesquite wood.  The one important thing to not is to not cook the wild game too long. Meats like Venison Backstrap do not stay on teh grill long because the longer you leave it on there, the tougher the meat will become.

Steaks - Grilling steaks is one of our favorites and we have some really great options if this is the meat you choice to grill or smoke. Steaks do not stay on the grill long so you will be able to use a more aromatic smoking wood as a good option. I really like using hickory wood when it comes to grilling a great steak. If you want you can also consider mesquite wood since mesquite fired steaks tends to be popular around the United States. If you would like a smoking wood that is a little lighter and really brings out some of the quality flavors of the steak, I like pecan wood.

Seafood - Seafood is a lot of fun to cook because cooking wood can sure bring out its natural flavors. Don't boil it in a pot when cooking over wood can do such a better job. This is not the time for hickory wood or mesquite wood. But, seafood does work well with the lighter woods and fruit woods.  Pecan, plum, apple, wine soaked oak are to name a few.

Hi Jason,

If you are going to be cooking vegetables with a pork shoulder, firstly the vegetables won’t stay on near as long as the pork shoulder. Do the vegetables at the very end of the smoking session. The smoking wood I would choose would be pecan smoking wood. You could add a bit of hickory for a bit of flavor but don’t use a smoking wood that is stronger than hickory wood. Use the pecan wood as your base, main smoking wood. Add a additional fruit wood or hickory wood and it should turn out well. That is what I would do.
