Hi Janet,

Boston butts are one of our favorites. I really like persimmon, pecan and maybe a bit of hickory. I have used 50% persimmon smoking wood and 50% pecan smoking wood and loved the outcome.

When it comes to whole hogs it is best to use pecan wood. Pecan is going to bring our some excellent flavor. Hickory may be overpowering for your tastes. Definitely don’t use mesquite cause it may ruin the hog with the overpowering taste of mesquite.
