Mesquite smoking wood is going to have far more aroma than hickory smoking wood. I enjoy both of them in cooking but I do use them in different ways. I use mesquite smoking wood in small doses and I don’t personally use mesquite wood for long smokes. I also like to use mesquite wood for fajitas, burgers, grilled vegetables and anything that can stay on the grill or smoker for a short amount of time. In Texas, mesquite wood is also used in long smoking periods. Hickory smoking wood is known as the “King of the Smoking woods” and is a wonderful cooking wood. Hickory wood is a long burning and hot burning firewood for sale and is a favorite for bbq pork ribs. Another famous smoking wood recipe is to mix pecan smoking wood with hickory smoking wood. I use a 50% each ratio. The pecan smoking wood helps the meat fall off the bone and the hickory wood really gives it the authentic flavor. Great question!

Yes, smoking wood and cooking wood is virtually the same thing. Often the term “smoking wood” is referred to as the type of firewood for sale that you’d use in a bbq smoker. Sometimes cooking woods are more referred to chefs and culinary aspects. At Upchurch Smoking Wood we use them both interchangeably and to us they are the same. Smoking woods are meant exactly how they are used – they aren’t meant to catch on fire much but to literally “smoke.” It is the sweet and aromatic flavor of smoking woods and cooking woods that we are after when cooking.
