Hi Josh,

Grilling chicken with wood gives it much more flavor than the regular charcoal option. You may want to still use a charcoal base because it’ll provide a even heat than just a cooking wood. There are a couple different options and most of it depends how much aroma and flavor you are looking for in the grilling of chicken.

One option is using hickory wood on top of your charcoal. Customers that have used hickory smoking wood with burgers and chicken have described the vast difference and often wished they had always used hickory wood. Hickory wood is known as the king of smoking woods and it will do a swell job and won’t overpower it too much.

Mesquite wood is another option but you will be getting more flavor than the hickory wood for sale. Mesquite is well known for steaks too. If I had to pick between hickory wood and mesquite wood, I’d still go with the hickory wood.

Last option is pecan wood. It’s going to be different than the two previous options cause it won’t have the powerful aroma. Pecan is fabulous cause it will bring out some great flavor and will be subtle. Pecan wood will be a smoking wood that you will be able to use for everything.
