Mesquite smoking wood - Mesquite cooking wood was made famous in Texas and they use it for all of their cooking. But beware, it is such a powerful aromatic cooking wood for sale that it can ruin your meat if you are using it for long smoking sessions. I have used mesquite wood in long smoking sessions like 6 hours and more and I had to throw all the meat away. Mesquite is best on the grill or very short smokes. Maple wood - Maple is a great wood and it is very light and subtle. It is most often used for fish and the delicate dishes you are creating. Maple is very popular on the east coast for restaurants cooking and smoking a lot of high prized fish and seafood dishes.

Mulberry smoking wood - Mulberry is quite underrated and can create some fabulous dishes. It has a sweet aroma and those that really love cooking and smoking with Mulberry smoking wood absolutely love it.

Cooking wood is made up of certain fruit cooking woods and nut cooking woods. Most of these types of firewoods are found in the orchards of the United States.  There are the fruit orchards like peach smoking wood, apple smoking wood, pear smoking wood, orange smoking wood and many more. One of the most famous nut cooking wood is pecan smoking wood. Pecan smoking wood is used quite frequently because it is not overbearing to all your cooked meats, vegetables, pork and more. Pecan cooking wood is one of the cooking woods that can be used virtually with any type of cooking dish. 

When you are beginning your fire in your BBQ smoker firebox it needs to be done correctly. You need to decide if you are going to use charcoal for heat or using a base wood like Oak cooking wood.  As long as you are not cooking over 6 hours you can use pecan cooking wood as your base. But, if you are going to be smoking for quite some time then you need to consider using Oak cooking wood. Oak has a fairly neutral aroma but it has the capacity of burning really long and hot. Some people use Oak cooking wood as their main cooking wood and that is great. But, some people like to make a smoking wood combination and use the Oak cooking wood with another smoking wood like Hickory wood or Pecan wood or a variety of other smoking wood options.  We have found that using a cooking wood combination of Hickory smoking wood with Pecan smoking wood is great. This is the main smoking wood combination of smoking pork ribs. The hickory smoking wood combines excellent with the pecan smoking wood. The Pecan cooking wood really helps the meat fall off the bone and the hickory smoking wood gives it that excellent flavor that is known around the country in BBQ restaurants. Then there are the types of cooking wood options for some really long smokes like brisket. Brisket is going to need a long burning coal base like oak smoking wood. It's not advised to use charcoal on the very long smokes because what does one do when the charcoal burn out? You are stuck!  So use a long burning coal base in your BBQ smoker box like oak smoking wood. The oak cooking wood is rather neutral in aroma. Then a great option can be hickory wood. If you like to have some really nice authentic flavor then hickory wood is great. Please avoid mesquite wood cause it is so powerful with a strong aroma that it can literally destroy your meats and you'll be throwing it all away instead of enjoying it.

There are a couple different ways in using cooking woods to. Cooking wood pellets are awesome and are really easy to use. Our smoking wood pellets are 100% fruit or nut wood that has been ground down into sawdust and then compressed into pellets. You will need to soak the pellets for 15 minutes before using because that will help them smoke more. If you don't have a smoker box tray, put about a 1/3 cup of damp pellets in your smoker box and set the box on or close to the fire. If you are not using a BBQ smoker tray, you can use aluminum foil and wrap the pellets in the foil. Make some small holes in the foil so the sweet pellet smoke can escape. We have a wide variety of all types of cooking wood pellets and they really make cooking fun because of the wide variety we have at Upchurch Cooking and Firewood.

We have experimented with so many types of smoking wood that we don't want to single out a certain best smoking wood and say it is the best. We do know that apple wood is not the best. The internet says it is and you just can't believe everything on the internet. We have experimented and found that creating a smoking wood mix of 2 woods can really increase the outcome of your cooked product.

 

Pecan wood with Hickory wood -   Great for BBQ ribs and such. Famous mix.

 

Pecan wood with Walnut wood -  Excellent and very similar to Pecan /Hickory but hickory smoking wood often gives people indigestion. Walnut is similar and does not have that effect.

 

Persimmon wood with anything -   This makes up some combinations that we like to have fun with and experiment.  We have always had great results with persimmon as one of the best smoking woods.

Taking trucks, trailer, chainsaw out to where trees grow is not something people do nowadays.  This is why we can offer you some great culinary firewood that comes straight to you. Pecan wood and Walnut wood mix:  Mixing Pecan wood and Walnut wood has created a great amount of wonderful meats here at our wood shop. We are always cooking and trying out new smoking wood recipes so we can bring them to you.  Pecan smoking wood tenderizes the meat and the walnut keeps the heat in your firebox and it provides a really nice flavor to go along with the pecan.  Often I use some seasoned pecan wood as my coal base if I am interested in using a pecan base. Some chefs and backyard cookers may start with some Oak wood because it will burn long and hot and it's flavor is pretty neutral.

Hickory wood and Persimmon wood mix: Another great smoking wood recipe so when hickory wood and persimmon wood is mixed together.  In your BBQ smoker mix you can use either of these cooking woods as your hot coal base. Both of these smoking woods have a hot burn to them. The persimmon wood will help tenderize your food on the grill and give it some sweetness. The hickory wood is going to give it some great flavor. Persimmon cooking wood has been a long time favorite in our cooking wood business but we don't have it available year round. It is a unique fruit smoking wood. Hickory is known as the "King of the Smoking Woods" and has been a famous smoking wood for a long time. If you have eaten great barbeque then it probably was smoked with hickory smoking wood. There are some BBQ chefs that use only mesquite wood but in our opinion that is a mistake because mesquite can be way overpowering.  The meats we have smoked with mesquite in the past we had to throw out the meat cause it ruined the food with over aroma.  Mesquite is excellent in small doses though and we greatly encourage that.  #growokc

Best Smoking Wood

Although finding the best smoking wood for your cooking is a opinionated aspect, it is well worth talking about. There are certain smoking woods that are going to be much better than others depending on what you are cooking and smoking. A simple rule of thumb is the heavier woods like hickory wood and mesquite are better for heavier meats. Lighter fruit smoking woods are for the lighter meats like fish, pork and chicken. You can use a heavier smoking wood on light meats but it does have the opportunity to over power your meat. When I grill vegetables I use light fruit woods if I want to bring out the vegetable flavor. To really give vegetables a good punch of flavor then I will consider a more aromatic smoking wood.

One of our favorite smoking woods at the shop that we've experienced thoroughly with is Pecan wood.  If you want to use 100% pecan wood in your next cooking session, it is possible to use pecan wood as your base wood. Doing this it will help if you start your firebox fire out with some seasoned pecan. This will insure you get your fire burning easily and hot. If you are going to be smoking for 5+ hours you may want to consider another base wood like Oak firewood. Oak will burn hotter and longer for your lengthy smoking sessions. But, if you are cooking under 5 hours then you will be able to do it well with pecan wood being your base wood.  Once you get your pecan smoking wood going well as your base, you can add your greener pecan wood. I like to use green pecan as the main smoking wood because it will burn long and really put out some great smoke. But remember that it is not considered a "firewood" when used like this. It is a "smoking wood" so it may not catch fire much.

Another smoking wood that puts off a good amount of heat and is a long burner is hickory smoking wood. We've had customers use it as fireplace firewood because of it being a hot and long burner. If you are going to use the hickory smoking wood for sale then you may want to pair it with a lighter smoking wood. Some great options are pecan wood, apricot wood, persimmon wood and our large collection of smoking wood pellets. Is apple the best smoking wood? Actually it's not. It just says on the internet that it is and you can't go by that when it comes to your favorite smoking wood. One reason apple wood is given glorification on the internet is they don't know what to do with all the apple wood in the orchards of Washington State. Most often they have to burn the trees and wood in the orchards because they need to plant more apple trees quickly. We have also found better cooking performance in pecan wood mixed with persimmon smoking wood that far surpasses what apple wood can do in the BBQ smoker.
