The hickory smoking wood combines excellent with the pecan smoking wood. The Pecan cooking wood really helps the meat fall off the bone and the hickory smoking wood gives it that excellent flavor that is known around the country in BBQ restaurants. Then there are the types of cooking wood options for some really long smokes like brisket. Brisket is going to need a long burning coal base like oak smoking wood. It's not advised to use charcoal on the very long smokes because what does one do when the charcoal burn out? You are stuck! So use a long burning coal base in your BBQ smoker box like oak smoking wood. The oak cooking wood is rather neutral in aroma. Then a great option can be hickory wood. If you like to have some really nice authentic flavor then hickory wood is great. Please avoid mesquite wood cause it is so powerful with a strong aroma that it can literally destroy your meats and you'll be throwing it all away instead of enjoying it.
There are a couple different ways in using cooking woods to. Cooking wood pellets are awesome and are really easy to use. Our smoking wood pellets are 100% fruit or nut wood that has been ground down into sawdust and then compressed into pellets. You will need to soak the pellets for 15 minutes before using because that will help them smoke more. If you don't have a smoker box tray, put about a 1/3 cup of damp pellets in your smoker box and set the box on or close to the fire. If you are not using a BBQ smoker tray, you can use aluminum foil and wrap the pellets in the foil. Make some small holes in the foil so the sweet pellet smoke can escape. Often I use some seasoned pecan wood as my coal base if I am interested in using a pecan base. Some chefs and backyard cookers may start with some Oak wood because it will burn long and hot and it's flavor is pretty neutral.
Hickory wood and Persimmon wood mix: Another great smoking wood recipe so when hickory wood and persimmon wood is mixed together. In your BBQ smoker mix you can use either of these cooking woods as your hot coal base. Both of these smoking woods have a hot burn to them. The persimmon wood will help tenderize your food on the grill and give it some sweetness. The hickory wood is going to give it some great flavor. Persimmon cooking wood has been a long time favorite in our cooking wood business but we don't have it available year round. It is a unique fruit smoking wood. Hickory is known as the "King of the Smoking Woods" and has been a famous smoking wood for a long time. If you have eaten great barbeque then it probably was smoked with hickory smoking wood. There are some BBQ chefs that use only mesquite wood but in our opinion that is a mistake because mesquite can be way overpowering. The meats we have smoked with mesquite in the past we had to throw out the meat cause it ruined the food with over aroma. Mesquite is excellent in small doses though and we greatly encourage that. #growokc
Although finding the best smoking wood for your cooking is a opinionated aspect, it is well worth talking about. There are certain smoking woods that are going to be much better than others depending on what you are cooking and smoking. A simple rule of thumb is the heavier woods like hickory wood and mesquite are better for heavier meats. Lighter fruit smoking woods are for the lighter meats like fish, pork and chicken. You can use a heavier smoking wood on light meats but it does have the opportunity to over power your meat. When I grill vegetables I use light fruit woods if I want to bring out the vegetable flavor. To really give vegetables a good punch of flavor then I will consider a more aromatic smoking wood.
One of our favorite smoking woods at the shop that we've experienced thoroughly with is Pecan wood. If you want to use 100% pecan wood in your next cooking session, it is possible to use pecan wood as your base wood. Doing this it will help if you start your firebox fire out with some seasoned pecan. This will insure you get your fire burning easily and hot. If you are going to be smoking for 5+ hours you may want to consider another base wood like Oak firewood. Oak will burn hotter and longer for your lengthy smoking sessions. One reason apple wood is given glorification on the internet is they don't know what to do with all the apple wood in the orchards of Washington State. Most often they have to burn the trees and wood in the orchards because they need to plant more apple trees quickly. We have also found better cooking performance in pecan wood mixed with persimmon smoking wood that far surpasses what apple wood can do in the BBQ smoker.
