Pecan firewood: I happen to use a large percentage of pecan firewood in my cooking. I may use 50% pecan firewood and then I will add a supplement firewood of one of the best smoking woods to get the best of both worlds. Walnut firewood is a choice I often pair up with pecan firewood. Lately, I have been using Apricot firewood because it is a sweet wood and it also burns long in my firebox. Oak firewood is often used as a coal base in your firebox but I choose pecan firewood as a base because it has the capacity to give much more to the cooking aromatic functions.
Walnut firewood: Walnut firewood has nice compliments because it doesn't let any ash in the bottom of my firebox. Walnut firewood also has some strong similarities to Hickory firewood, but the Walnut doesn't dry out meat like the Hickory can. Walnut firewood also has a sweet and nice feel to smoking and cooking.
Maple firewood: Maple firewood is a light and fruit smoking wood. If I am smoking something delicate like fish and it don't want to be overpowered, then I often use a little bit of maple firewood. It isn't usually my go to firewood, but it definitely has some good qualities as of the best smoking woods for a delicate touch.

Hickory firewood: Hickory firewood is known as the "King of the Smoking Woods" and is a highly popular firewood in all types of smoking and cooking. It is famous for bbq ribs here in the midwest. The part of hickory firewood that really rubs me wrong is its ability to dry out meats. If hickory firewood didn't dry out meats, it would probably be my favorite firewood for all my home cooking and smoking! To get around this negative feature of hickory firewood is I use Walnut firewood in place of it. Walnut firewood is very underrated and is a favorite of mine!
Apple firewood pellets: Most of the apple firewood is coming out of Washington State and getting it to our Oklahoma City wood shop is a task. I have been using apple firewood pellets and it has given great results. I use 1/3 cup of firewood pellets wrapped up in aluminum foil and then poke some holes in the foil. This allows the sweet apple firewood smoke to escape and fill the air of your grill and smoker. If you use a gas grill, using apple firewood pellets can turn your gas grill into a nice smoker.
